4 large sweet potatoes, peeled & cut into 1/2" thick slices
1/2 cup apple juice
1/4 cup firmly packed light brown sugar
Salt
Freshly ground black pepper
1/3 cup sweetened dried cranberries
Place sweet potato slices in a lightly oiled slow cooker.
In a small bowl, combine apple juice & brown sugar & pour over potatoes.
Season w/salt & pepper to taste.
Cover and cook on low for 6 hours, until potatoes are tender.
Just before serving, smash the potatoes w/a potato masher until smooth and fold in cranberries.
Serve hot.
