Slow Cooker Lamb and Spinach

Ingredients:

2 pounds lamb stew meat, diced
1/2 cup all purpose flour
1 tbs ground coriander
½ tbs ground cumin
1 tbs paprika
½ tsp cayenne pepper
2 garlic cloves, minced
1 tbs fresh ginger, minced
1 medium onion, finely diced
1 (28 oz) can crushed tomatoes
1 (8 oz) container plain yogurt
1 cup packed fresh spinach leaves


Directions:

1. Place the flour in a plastic bag add lamb a few pieces at a time and coat well.

2. Place the lamb in the Crock Pot.

2. Mix the remaining ingredients together in a bowl except the spinach leaves.

3. Pour over the lamb.

4. Cook on LOW 8 to 10 hours.

5. An hour before serving stir in the spinach leaves.

 Serves:  4 to 6  Serve with steamed veggies and rice or noodles.
